Scrapbooking is a great idea. You can teach them a certain kind of scrapbook technique, like how to fit more photos on a page or something. Look in some scrapbooking books to get some ideas.
You like to ride horses, how about how to take care of a horse? What you should do when you’re done riding them.
I did something on cooking when I had to do this in school. That’s not in your list but I figured I’d throw something out there.

When we did our speeches in high school some of the most effective (and funniest) were on things you do everyday. But definitely think more about your interests and use that.
